Un-Stuffed Cabbage Recipe


Un-Stuffed Cabbage

One of my fellow challengers posted this recipe for delicious Un-Stuffed Cabbage. 
I love stuffed cabbage and I am very picky because my grandmother's stuffed cabbage are the best (in my opinion). So, I am excited to try this and it is pretty easy to make! If you try it, let me know what you think!! Happy Cooking!





Ingredients:

1 1/2 to 2 pounds lean ground beef or turkey
1 tablespoon oil
1 large onion, chopped
1 clove garlic, minced
1 small cabbage, chopped
2 cans (14.5 ounces each) diced tomatoes
1 can (8 ounces) tomato sauce
1/2 cup water
1 teaspoon ground black pepper
1 teaspoon sea salt

Preparation:

In a large skillet, heat olive oil over medium heat. Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender.
Add the garlic and continue cooking for 1 minute.

Add the chopped cabbage, tomatoes, tomato sauce, pepper, and salt. Bring to a boil. Cover and simmer for 20 to 30 minutes, or until cabbage is tender.
Yield: Serves 6 to 8

I have admitted numerous times my skepticism about Shakeology. I must admit that I am really enjoying Shakeology and the way that it makes me feel. I keep finding new recipes and although some do not work out so well... I have had a few work out great, where I just threw some ingredients in and everything was fabulous! I think my best concoction thus far has been my chocolate covered cherry recipe. I used 1 scoop of Shakeology, 8 oz. of almond milk and about a half cup of cherries. YUM YUM YUM!

We headed on vacation this week for a little Arizona getaway and I was bad and did not take my Shakeology with me :( I didn't know exactly how to pack it. Ooops!

It was really nice to get away and enjoy the sunshine. It has been way too cold here lately and getting some sun was just what I needed. Sometimes you need a break to just relax and have a good time and forget about everything that is going on. 

Now that I am home and back to my routine with my workouts and my Shakeology I am feeling good. It was tough to get back into the swing of things especially after being off for a few days and you have to get back into that mind set of working out and setting your time away in the evenings to get back on track. As I'm sitting here right now, I don't FEEL like getting up to do my workout, but I know how I will feel after and it really is a great feeling! Even when you don't feel motivated,  you have to dig deep within yourself to remember how good you will feel and that your goal at the end is worth it. Never stop, never think that you can't get to where you want to be. Always remember there are people that are in the same shoes as you and it's your choice. You can either continue to sit on the couch with your chips and pop or get up and get moving! You might not be perfect at first, but you will get there! Make it happen!!!

Week 1 Chalene Extreme

Week 1:

So I am coming to the end of my week 1 on Chalean Extreme and I am so sore I can hardly move! lol Now granted, this is a good thing and I love that I'm sore because I know that I am really working it, but YOWZAAAA!


But this quote really says it all, because even though I am sore, I know that if I keep pushing, I will have more strength and get my goal body. It's just about pushing through the pain and knowing that you are working hard for something that you want. 

Week 1 Shakeology:

I started with 1/2 serving of Shakeology just to make sure that my body would handle it ok. I am on the Vegan formula because I have issues with milk and whey protein and the Vegan formula is perfect for me! I have made a shake everyday and I have had 0 issues!! YAY!!! I can already feel myself having more energy. When I wake up in the morning, well I have actually been waking up everyday before my alarm and have gotten up and started getting ready earlier and I feel great! I feel like my mind is clearer, I feel really focused and I have more energy and I just feel GOOD! It's amazing how 1 shake can make you feel this way, but being packed full of great ingredients definitely helps. I tried a few recipes and found some that I really enjoy, I also made a few disasters, one involving frozen strawberries and water.... EEEEKK! It was more like a weird, sorbet textured... something. I don't even know how to describe it!

I've been struggling in the eating part of my journey. I tend to binge on dinner because I'm really bad with doing 6 small meals a day. When I'm at the office, I get busy and forget to snack. I also forget to take snacks with me and it just doesn't work out too well for me. I need to start planning my weeks better and really follow my meal plans. It's hard to break old habits!!!

Lemon water benefits

Lemon Water...

Someone told me a long time ago that lemon water was BAD for you. Something about staining your teeth and blah blah blah. So I came across a posting about lemon water and how it is good for you.. what? After all of these years of me avoiding it like the plague, I find out it's good for you?

Lemons have tons of nutrients and a range of health benefits:

1. Helps flush out toxins 
2. Helps your skin stay blemish-free and can also keep those nasty wrinkles away!! It detoxifies your blood to help make your skin look radiant! ahhhh
3. Energy booster. Lemons help reduce anxiety and depression. Did you ever take in the smell of a lemon and notice it relaxes you? This is probably why I love the smell of lemon cleaners.
4. Aids in digestion by loosening toxins in your digestive tract and helps to relieve burping, heartburn and indigestion. This is probably why the italians love to give you limoncello as your digestivo! I can't complain, I love the stuff :) Especially fresh from Italy! Mmmmmm...

First experience with Shakeology

I am going to be getting started on my first experience with Shakeology in 2 days...so I'm not totally sure what I'm getting myself into but... I did get an awesome new blender.....
